For Gus – Succulent Death, Step-by-Step

Mike has a buddy in the armed forces who is overseas right now. (Hi Gus!) Mike told Gus that he’d document our first attempt at the Succulent Death recipe (inspired by the Bacon Explosion one). Mike also claims that the happiness of many a solder over there relies on this post (*roll eyes here*).

Step 1

Create a 5×5 weave of bacon. It’s best to use the thick cut kind.

We actually created two of these, so you’ll see two 5×5 monstrosities throughout the documenting process.

Sprinkle BBQ seasoning over the weave.

We used the Pampered Chef BBQ Seasoning.

Spread uncooked meatloaf recipe over the entire weave. Make sure that you spread it all the way to the edges, and that it’s the same thickness the whole way across.

Spread mashed potatoes over the meatloaf.

We used Dinner’s Choice Garlic Mashed Potatoes. A huge shortcut for things like this. (Great for Shepherd’s Pie as well…)

Squirt some BBQ sauce over the potatoes.

We used Sweet Baby Ray’s Hickory and Brown Sugar.

Carefully separate the meatloaf layer from the bacon layer.

Roll the meatloaf layer up from one end to the other.

We had 4 pieces of bacon left over after the weave, so Mike stuck them on the ends of the meatloaf roll to keep it all contained.

Roll the meatloaf back toward the opposite end; this time include the bacon layer so you end up with the bacon completely covering the meatloaf.

Sprinkle the entire roll with more BBQ seasoning.

We put it on for about an hour, but it could have used at least another half hour. The bacon was a little undercooked.

As you can see, Mike also grilled up the following: potatoes, green beans, asparagus, hot dogs, zucchini, and peppers.

OH.MY.GOD. this was sooooo good. πŸ™‚

Observations

Other than cooking it longer, we may try to alter the meatloaf recipe a bit so that it’s a little firmer. Mike was worried that the roll would fall apart (hence the tinfoil under it on the grill). Being able to put the roll directly on the grill might make the bacon cook a bit more as well.

Another Quick Update

I took Logan to get his hearing checked yesterday (just as a precaution because he’s not really talking much). The facility was WONDERFUL. We took Burke into Boston when they thought he needed a check – this one was outside of Boston and much more kid-friendly.

I held Logan on my lap while a nice, young lady tried to keep his attention on the toys she was playing with. Another nice lady was behind the mirror making sounds come out of speakers on either side of us. If Logan looked in the right direction, he got the surprise of a toy lighting up and moving under the speaker. He was such a good kid! He even let them put headphones on him for a while.

Long story short – he’s all good. No hearing issues. (Which is pretty much what we figured, but it can’t hurt to check.)

Update! Update! Read All About it!

I have various, totally unrelated updates about a bunch of things that I’ve written about before.

First…the squirrel is gone! We finally realized that he wasn’t really coming and going as we thought. When he was “gone” he was just up the chimney a bit out of our sight. Which means that the poor thing hadn’t eaten a thing since at least Monday. So we got a box and a stick and tried to shoo him out of the fire place. I think he had totally given up by that time (he went crazy a few hours before, but was just hunkered down in the corner by this time). Lucky for us, he was sluggish – cuz he didn’t quite make it into the box. He lumbered around the living room and into the kitchen before Mike cornered him in the bathroom. We set him free and he ran off, but I don’t know if it was too late by then. I hope he’s okay – and I hope he learned his lesson and will leave the chimney alone now! (I checked today, the cap on it is loose – we’ll have to fix that soon!!)

Second…My boss called me yesterday. Apparently he thought he’d already talked with me about the whole work-from-home thing. Uhm. no? He totally made it sound like this is a go!! *cartwheel* No one has any idea of timing…but the lease on the office is up in October, so something has to happen by then anyway. I’m so incredibly super excited it’s not even funny. And I will be so totally crushed if this falls through. I was checking out the telecommuter policy yesterday and apparently if my company asks you to work from home, they’ll provide a little bit of dough to get you started with “set up” stuff and then they’ll pay for the high-speed internet connection on top of a monthly stipend to off-set stuff like electricity and things. COOL!

Third…remember waaaay back in July when I wrote the post about being “famous” for our staycation? The reporter who interviewed me emailed to let me know that his book came out! There’s even a rumor that I’ll get a signed copy. Nice! πŸ™‚ I looked through some of the pages online and it says that my twins are girls. Oops! Ah well – it’s still really cool.

Still a Little Peanut

Logan had his 18 month old checkup today. And … he’s still a little peanut.

The Stats
Weight: 21 pounds 3 ounces (3rd percentile)
Height: 31 inches (25th percentile)

He’s still pretty much on his own growth chart, so Dr.Β  Doctor isn’t worried much more than wanting to keep track of it. She doesn’t think any tests are needed to see if there’s something “wrong.”

He’s on track for everything (running, climbing, coloring, etc) except speech. Given Burke’s history with speech – I’m really not that surprised. Apparently, at 18 months you should have a minimum of 25 words…I was hard-pressed to come up with 6. (cheese, juice, no, shoes, daddy, bye…) There are probably some I’m forgetting … but even these are somewhat pushing it. He does try to imitate, and uses intonation for many things. He even intones “thank you” when you give him something. πŸ™‚

As a precaution, Dr. Doctor wants his hearing tested (I’m sure it’s fine, but you can’t ever be too careful), and a screening by Early Intervention. Since both Burke and Maggie went through EI – I have absolutely no problem with that screening – they were wonderful with the twins!

The poor little guy got two shots in his arm – but didn’t even flinch. He squeaked like he was about to cry, but then must have thought, “Huh. That wasn’t so bad” and moved on. He’s such a great kid.

A Glimpse

Over the weekend, the twins attended a birthday party at the local gym they love. (Actually, the lovely lady pictured in that other post was the one who over-saw the party – so that was cool.)

When we first got there, Burke didn’t want to leave my side, so Ms. Gymnastics asked if I wanted to go with them. I held Burke for a bit, watching what the other kids were doing. The ball pit (actually, foam squares…) almost enticed him…but it wasn’t until he saw Maggie’s glee while swinging on the rope swing INTO the ball pit that he wanted to join in. (And yes, that does say Maggie was swinging on a rope. Oh, my heart! LOL)

I was able to go and interact with the other adults for a bit. I only knew the mom of the birthday boy (she’s in my twins club), but everyone was very nice.

After a little while, I noticed that all of the kids were sitting in the ball pit – except for Burke and Maggie. Not my two. They were still running/bouncing down the length of the trampoline and jumping into the ball pit, then running around to do it again. And again. And again. They stopped only when Ms. Gymnastics mentioned that it was time to go get cake. (Yes, that was all before the sugar high hit.)

I was talking with Ms. Gymnastics while the kids were eating cake and she was telling me that everyone else told her that they were too tired to do anything else…and she was amazed at the energy my kids have. (And that I’m crazy to have another one at home…) Yep. A small, little glimpse into my life at the zoo πŸ™‚

What a great place for a party though! The kids are ushered around and they get to burn off TONS of energy. They slept really well that night.

Long Overdue

Mike and I rarely go out. If we do, it’s always a family member (*ahem*,Β  Cathy) who looks after the kids.

Part of our problem is the guilt we feel leaving three kids to someone else to put to bed. It’s not an easy task for the two of US, so we don’t feel right about leaving it to someone who isn’t used to it.

Part of the problem is finding a sitter. I suppose we could interview people found on care.com or craigsist or sittercity or something…but that feels so….nanny-ish – and we already have one of those! And since I was a babysitter growing up, I know the sense of community that comes with it – so finding someone we sort of know through the community seemed like the right way to go.

Our neighbors right across the street have two daughters; one who is so incredibly busy with school/work/social life that she’s never home. The other is still a little too young to be left alone. Especially with 3 kids. (I so need to start hiring her as a mother’s helper so when she gets a little older she’ll be perfectly groomed. *grin* )

Our church also has some very lovely ‘tweens who would be perfect mother’s helpers. Again, don’t think they’d do very well alone with 3 kids right now.

One of my twin mom friends (Hi Anna!) has an older daughter who came over to “play” with the kids today. She’s GREAT!! Built-in twin experience. The kids really loved playing with her. I could hear lots of giggles for the time she was here. She’s pretty busy as well, but I think she’ll be able to squeeze us into her schedule every now and then πŸ™‚

The plan, right now, is to have her come over after we put the kids to bed and rush out for a late dinner somewhere. Wish us luck!! πŸ™‚

What…?

I woke up this morning feeling like my ear was stuffed with wet cotton balls. And any time anyone says anything, my ear rings. Ya. Fun stuff.

The wet cotton balls seemed to have gone away, but there’s still a resonating tone whenever someone talks (or screeches or makes any noise of any time). It’s about the same tone as theΒ  beeping of a truck backing up.

A Bloggie buddy mentioned nasal spray might help. Any other idea out there? This is really annoying!!
