The Best Kind of Shopping

I’m not much of a shopper. Especially for clothes. Oh sure, every now and again I’ll go and look through some shops, but I’d much rather go to a craft store…or a book store (before I got my Kindle, anyway). And even though I’m in the grocery store just about every other day … doesn’t mean I like it!

So when I found a fellow twin mom who has boy/girl twins a year older than Burke and Maggie – who also has great taste in clothing (that lasts), I hit pay dirt. Nearly every season I go “shopping” in her closet and find lots of cool stuff! Pants, shirts, coats, shoes…you name it, she’s got it.

It’s a win-win – she doesn’t have to lug it all to the consignment shop (or the twin sale), and I don’t have to go real shopping!! (Thanks, Lisa πŸ™‚ )

Makes My Monday: Synchronized Cooking – Virtually

My friend Lori created a Recipes group on FB for those of us who have come to a stalemate with what to make for dinner. She figured we’d all just post recipes to share and have some more cool ideas to run with.

What we didn’t anticipate was the brilliant idea of another member: a Group Cooking Party. Or, Synchronized Cooking. What a cool idea! Everyone does the same recipe on the same night (or weekend, as the case was this time around). Then we all post pictures and describe how it went…and if we changed stuff around and all that.

Even better? Having a neighbor who is doing the same thing and then heading to her house to swap the final results. Especially since she used a different sauce on top than I did. πŸ™‚ (Although, that was also a bit intimidating – she’s a much better cook than I am! LOL!)

The kids didn’t love it. Maggie – my spicy girl – ate a bit…and then turned to the pizza. Burke and Logan ate a bite and turned their noses up at it. All of the adults LOVED it though.

What’d we cook? Buffalo Chicken Stuffed Shells with Creamy Ranch Sauce. I got the ranch sauce from Astrid’s blog except, her’s is a much healthier version ;). (Mel made Blue Cheese Sauce instead). Both were *so good* – but I think I liked the Blue Cheese sauce one a bit better. Although, if I were to do the ranch one again, I’d add more milk or double the recipe or something so that there would be more to put over the top.

Here’s the recipe if you’re interested.

Buffalo Chicken Stuffed Shells with Creamy Ranch Sauce

  • 1 package jumbo shells
  • 2 boneless, skinless chicken breasts, cut into very small pieces (bite size)
  • 1 Tbsp olive oil
  • 2/3 c hot sauce (I used Frank’s)
  • 1/3 c blue cheese crumbles
  • 1/3 c shredded mozzarella cheese
  • 1/3 c shredded Parmesan cheese
  • 2 c ricotta cheese

For Creamy Ranch Sauce

  • 3 oz cream cheese
  • 1/2 c milk
  • 1/3 c shredded Parmesan cheese
  • 1 packet ranch dressing seasoning

Preheat oven to 400 F.

  1. Boil a big pot full of water and cook pasta shells according to directions.Β  Drain and set aside. (You’ll probably end up with a lot more shells than filling, just FYI)
  2. Heat a saute pan over medium heat and add olive oil.Β  Put the bite sized chicken pieces into the pan and cook until no longer pink in the center.
  3. In a bowl, mix together the hot sauce and cheeses.
  4. Stir cooked chicken into the cheese and hot sauce mixture.
  5. Stuff the shells with the mixture and fill a 9×13″ baking pan with them.
  6. In a small skillet, melt the cream cheese.Β  Stir in the milk and the shredded Parmesan cheese into the melted cheese, and then stir in the ranch seasoning packet.
  7. Spoon this sauce over the stuffed shells.
  8. Bake the stuffed shells for 20-30 minutes.

Is It Just Me?

So…I’ve been sitting at work (yes. AT work) for the week. And I’m 100% reminded about how incredibly lucky I am to a) not have to do that commute every day and b) not have to put up with all the typical office crap. Sure, I miss the conversations and catching up with other real-live adults (and the food that seems to be everywhere! sheesh!)…but mostly – I am SO.SO.SO happy to be able to work from home full time.

Anyway…Am I the only one who gets bugged by fellow cubical-mates carrying on conversations on their speaker phone?? Seriously – how do you not get that this is incredibly rude? I don’t want to hear your (LOUD) conversation all day, every day. There’s a reason headphones were created. And I get that you’ll have conversations in your cube face-to-face… usually these are softer than phone conversations, so that’s no big deal. But entire meetings on your speaker phone? Gah.

Another Day, Another Disease.

We now have a stomach virus working its way through the house.

Logan was hit over the weekend. He’s just starting to be able to keep things down.

I felt queasy Sunday and Monday. I was worried about keeping things down, but managed to be okay.

Maggie woke up with a scream last night…when we went in to see what was wrong, the first thing out of her mouth was “I don’t think I can go to A’s tomorrow.” (She was supposed to have a playdate with her BFF – breakfast with her and a “for as long as A’s mom can stand her” playdate.) She’s still complaining of her tummy hurting today, but she’s been keeping her food down since that one episode last night.

And now Mike’s heading home from work with the ick. And you KNOW it has to be bad for Mike to leave work!!

Makes My Monday: Productive Meetings

My boss and another co-worker are in town this week, so I have to go into the office all week (a 45 – 60 minute drive each way). Today was the first time in a year that I’ve had to make this drive. Man…a great reminder of how lucky I am to work from home every day!!

Anyway…because we’re all in the same location, that means TONS of meetings this week. Meetings usually mean super unproductive weeks; but it all depends on how you look at the meetings…and who attends the meetings. With my bunch, even though we’re not getting individual work done, we almost always end up being SUPER productive.

Today’s meeting was to go over a new process that the engineers in the company are adopting…and how we (the documentation group) will fit into the process. Intelligent questions; awesome answers. I love it when that happens.

Here’s to hoping the rest of the week is just as productive!
